Vegetarian recipes

To all you veggies in the house - have you got any good sites, tips on what to eat, recipes, etc, for vegetarian food.

I'm thinking of broadening my diet.

(Fish, eggs, milk, cheese all fine)

Fish is not a vegetable.
Other than that, you can use www.recept.nu and use the "vegetarisk" search option to find recipes in Swedish (and therefore ingredients accessible in Sweden).
I also like cooking with Kurma (www.kurma.net).
Once you get into the routine it's easy to improvise.

FishTank I should not look at your links at work just before lunch...

As a general rule looking at Indian and other Asian food is easy to find vegetarian options or adapt other recipes to vegetarian styles, as vegetarianism is quite common there. Italian pastas etc are also more accomodating for vegetarians than, for example, traditional Swedish or French styles.

Vegan Potato Latkes ( Israeli style)
3 lbs. baking potatoes, peeled
1 yellow onion, finely chopped
2 Eggs or Egg Replacer equivalent of 2 eggs
1 tsp. salt
¼ tsp. pepper
4 Tbsp. unbleached flour
Canola oil for frying

• Grate the potatoes and squeeze out the moisture. In a large mixing bowl, combine the potatoes with all the remaining ingredients, except the oil.
• Heat 1/4 cup oil in a large skillet. Place 3 Tbsp. of the mixture into the skillet for each latke. Use a spatula to flatten the mixture to form the latke. Fry over medium heat about 4 minutes per side, or until golden brown. Drain on paper towels and serve hot with apple sauce.

its worth signing up for a free account so that when you browse and see something you like, you can click to save it in your online cookbook. There are a zillion vegetarian options if you type it in as a search word, and you can always search by the ingredients you have on hand too.
